What are ceramic knives?

The materials – Good quality ceramic knives are made of hard ceramic derived from high-grade zirconium dioxide (zirconium #4 is the highest grade). This natural material is ground to a fine powder and then pulverized with water to make a paste.

The slurry goes through a drying process that changes it back to a product that is poured into a knife mold that undergoes substantial pressure ¹.

The manufacturing – The knives go through a long firing process to create a product that is rust and corrosion proof and inert (meaning it doesn’t impact food flavor). Rather than being tempered like steel blades, ceramic knives are fired in a powerful furnace for hardening ¹.

An additional cold or hot isostatic pressing in the process increases the ceramic toughness. This is seen in the best kitchen knife brands now offering a black-colored blade designed with this process.

Zirconium is near diamond hardness, meaning a ceramic knife blade that’s second to diamond in strength and toughness. As well, ceramic knives are razor sharp and great for precision cutting. This means paper thin tomato slices and perfectly diced onions for you in the kitchen.

Black vs white ceramic blade

Black is supposedly better. A black blade indicates the knife has gone through isostatic pressing to increase the density and strength of the ceramics. This process creates a tougher blade as it produces a tighter knit between the ceramic molecules.

You need to think about what are the best cooking knives to suit the type of cooking you do.

According to top chef, Terrance Brennan of Picholine and Artisanal, a professional chef knife set includes “A 10-inch chef’s knife, a boning knife, a midsized utility knife, a paring knife, and a serrated knife for slicing tomatoes and bread”.

If you were doing that sort of cooking then you would look to fulfill those needs.  For the home, a best chef knife set might include a knife each for chopping, slicing, and carving, or any of the following.

Common kitchen knives, available in ceramic:

Chef’s knife – an all-purpose broad and heavy-bladed knife. The top chef knives are curved for rocking on the cutting board and are between 6 and 12-inch in length. This will be something you use every time you cook.

Paring – a small knife for peeling and small intricate work usually between 2 and 4.5-inch in length.

Utility – a knife in between a chef and a paring knife in size. Usually between 4.5 and 8-inch in length. Great for folks who feel they want a small knife than a chef’s knife but not quite as small as a paring knife.

Bread knife – serrated edge for cutting through bread crust without bruising the soft inside part. Also good for slicing tomatoes and lemons or peeling pineapples or melons.

Best Japanese kitchen knives 

The traditional Japanese knives are chisel ground with bevelling on one side.

Styles that are available in ceramic include the Gyuto – a chef’s knife for professional Western cuisine, and the Santoku (sahn-toh-koo) – a general purpose kitchen knife that’s flatter than the Gyuto and with a rounded tip. Both are hugely popular.

How to choose the best ceramic knives for you

As in choosing all top rated kitchen knives, there are three main qualities or elements to consider to ensure your satisfaction with their use.

Sharpness – I’ve already mentioned how ceramic knives are super sharp and retain their sharpness for longer than steel blades.

Balance – The way the knife feels in your hand affects your enjoyment and the efficiency of using it. Look for a well-balanced knife. This is one with weight evenly distributed. It’ll mean better cutting and less exertion by you.

Handles – Rubber or plastic handles are typically molded for ergonomics. They are hygienic but may be slippery when wet and break down with time.

Handcrafted wooden handles, however, just look stylish, and these offer better grip making them pleasing to hold. Keep these out of water and oil from time to time. The main thing is that the handle feels comfortable and secure. Knuckle clearance is important, especially with chef’s knives.

The one other factor, of course, is the price. The sets I’ve listed range in price from low to high, so there’s something there for everyone’s budget.

How to care for ceramic knives

The best ceramic knives are worth taking good care of. I recommend you hand wash only. Ceramic knives are super easy to clean, so this is not a hassle.

Always store in their protective covers. As said above, avoid heavy duty cutting or prying, e.g. use steel knives with frozen food, bones, or hard cheese (Parmesan, cheddar etc.), not your best ceramic knives!

Use only wood, bamboo, silicone or plastic (not stone or glass) cutting boards and never scrape the ceramic blade across the boards. Avoid situations where you are likely to drop or throw the knives around as this could cause them to break.

The best and safest way to store ceramic knives is with a bamboo knife block (see below).

Can you sharpen ceramic knives?

Many people ask this question. Can ceramic knives be sharpened? The answer is yes!

Sharpening brings out the best in a ceramic knife.

How to sharpen ceramic knives

How do you sharpen a ceramic knife?

As I said above, ceramic knives can go for years without needing to be sharpened.

When they do dull, they do so different to steel blades. In ceramic knife blades, microchips form on along the edge and these require special treatment to remove.

Most manufacturers recommend sending them to professionals. Brands like Kyocera offer free lifetime sharpening (though you may need to pay for transport costs).

However, you can sharpen them yourself with a diamond coated knife sharpener.

An electric ceramic knife sharpener like this one has a 2-stage diamond sharpening wheel, designed for ceramic kitchen knives. Electric sharpeners are faster and simpler to use. They can also remove the small blade chips.

A manual sharpening rod or triangle that you use for steel knives is not recommended, as it may chip the blade and ruin the knife.

Ceramic knife vs steel

There are clear differences between a steel and a ceramic blade knife. Steel knives are recommended for cutting, chopping, and slicing meats with bones, and in parting or cutting frozen foods.

Ceramic knives are ideal for slicing boneless meat, vegetables, fruit, and bread.

Ceramic knives are considerably harder and will retain a cutting edge longer than forged metal knives, but then, on the other hand, they are more brittle than steel. Best of all, a ceramic knife resists bacteria and is healthier and more hygienic than a steel knife.

Ceramic is also more eco-friendly.

Pros and cons of ceramic knives

Pros of ceramic knives:

  • super sharp
  • retain sharpness longer than steel
  • won’t corrode in harsh environments,
  • are non-magnetic, and
  • do not conduct electricity at room temperature
  • resistant to strong acid and caustic substances
  • lighter than steel

Cons of ceramic knives

  • Though they are harder and hold their edge longer, they are more brittle than steel knives
  • Take care not to drop the knives onto hard surfaces. The latest design processes, however, have reduced the risk of breakage.
  • Not for heavy-duty chopping and prying, e.g. with bones or frozen foods, as this can lead to chipping of the blades.

Final thoughts

At the end of the day, a good set of ceramic knives is a positive addition to your kitchen equipment.

They’ll save you time and show your finesse, but they won’t do everything in the kitchen.
