How much heat a ceramic pan can take will depend on its design. A pan of 100% ceramic can handle extreme heat (up to 2500 ºF); the nonstick type with advanced technology up to 600 ºF; but for the standard nonstick type no more than medium heat is advisable.
If you plan on cooking food with high heat then it will be best to invest in a ceramic pan designed with this in mind. The latest designs in nonstick ceramic pans are usually safe up to 600 degrees Fahrenheit. Some may be less, say 450–500 ºF. Here are some choices…

Can I use my ceramic frying pan at high heat settings on gas stovetops?
Yes you can if it is the right design. Some ceramic pans have special designed layer of nonstick coating that can withstand up to 600 ˚F and others are pure ceramic, which can withstand extreme high heat, like the Xtrema skillets I covered in my review of these 100 percent ceramic pans.
An all-ceramic type of pan like the Xtrema skillet can definitely go on gas stovetops at high heat. The thing to watch however is to heat the pan gradually rather than shock it with a sharp temperature change in order to avoid damage.
Can I put my GreenPan in the oven at high heat settings?
